Milk is considered a wholesome food. It is a rich source of calcium, minerals, vitamins and proteins. The products derived from milk are known as milk products. For better health and strong immune system, consumption of milk is quite essential. However, there are many people who are allergic to these products.

I am astonished to find that almost every one has a lean waist, flat stomach and an upright gait. Among these boys no one is on diet. Most of them do not perform any regular exercise or play any sports.
 

 


I would advise for a container full of yoghurt too. I have found sour yoghurt, best for churning. Thus, keep yoghurt in open; out of the refrigerator for at least few hours. Its smell would indicate it has become sour and if required you can taste too.

Make sure there is no cream added to the tikka masala. If you are having rice then have some steamed rice instead of the biryani or pileau. Ask for no ghee to be added to the steamed rice. When you order curry this will normally be accompanied by Indian breads known as chapatti or naan.

The Bhati is quite unlike any other Indian bread. Predominantly eaten in the state of Rajasthan, Bhatis are made with unleavened wholemeal flour dough into which a little salt and clarified butter have been mixed. The dough is shaped into small balls and baked in a moderately hot oven until brown on the outside and soft on the inside. Bhatis are traditionally served in a container that is then filled with clarified butter. They are eaten after being allowed to soak for a while.

After a half hour or so, return to your dough duties. Rip off a piece of dough about the size of a tennis ball. Form it into a round disc and then roll it out with a bread roller into a large circle that is about a millimeter thin.

You would see the oily liquid floating above the solid remains. Take a strainer and strain out the clear liquid. This liquid is, in fact, the pure clarified butter. It would be pure white in color in case buffalo milk is used. It would appear in yellow where cow's milk is used. It has a typical taste quite different from butter or cream. Apart from a variety of Indian bread, Indian veg and non-veg dishes are often prepared in clarified butter.
